Thank you Liz! Yeah…when I saw the recipe for the first time I was a bit intimidated. Flipping: definitely not my strongest suit! haha

Sara-yeah…i would rather have nachos than flimsy quesadilla. But I still like my tortilla on the crunchy side!

I worried about the flipping, too, so I didn’t put all the mixture in the two tortillas as that was a huge amount of mixture! Then I sort of pressed down on them to have the cheese melt nicely and act as a glue so it wouldn’t all come flying out when I flipped. It worked. Yours look wonderful…love the technique photos.

Welcome to the group! I didn’t participate this week, but when I was reading over the recipe, I thought about how hard it would be to flip an entire tortilla over without spilling the filling everywhere! Good thinking with cutting it in fours. Looks delicious!
