Fried Tiny Green Tomatoes

I’ve been craving the Tomato and Mozzarella combination of Insalata Caprese for quite some time now…so on Wednesday, I picked up some red tomatoes  at the Farmer’s Market from the WOW Farm stall.  But…what is this?  They had such beautiful looking Green Tomatoes, that I just could not resist!!  It took only a split second for the red tomatoes to disappear, but I didn’t quite know what to do with the Greenies…

Well, since the only thing I’m familiar with when it comes to green tomatoes is “Fried Green Tomatoes” from the movie.  In the past, I hadn’t been too successful with frying anything, so I was a little bit worried, but I decided to give it a try.

While searching for the recipe at Tastespotting, I came across this recipe by Des of Life’s Ambrosia which involved sandwiching Mozzarella in two Tomatoes!  Genius!

Amazingly enough, I had all the ingredients in my pantry including the Panko!

Because my tomatoes were so small, I had to tweak the recipe a little.  I used about 5 tomatoes which gave me about 20 slices or 10 small tomato sandwiches.

See how close up I cropped the photo?  Well…that’s cause they did not come out beautifully like the ones you see on Des’ blog.  Some of them were kinda soggy and others were crispy…and mostly they were not as uniform.  Was it the size of the tomatoes?  I don’t know…  Once again, failed in frying.  But they did taste pretty good!  In fact, my mom (who’s visiting me at the moment) and I devoured them right off the kitchen counter!
